
FIONA FAULKNER’S PINK PORRIDGE RECIPE
Serves 2
1 apple, peeled, cored and cut into chunks
1 tbsp caster sugar
2 tbsp water
½ tsp cinnamon (optional)
About 6 strawberries
About 6 raspberries
50 g (2 oz) porridge oats
200 ml (7 fl oz) milk
1. Place the apple, sugar, water and cinnamon in
a saucepan and cook over a medium heat for 3 minutes, stirring occasionally.
2. Add the strawberries and raspberries and cook
for a further 3 minutes or so – until the apple is soft (everything will cook
quicker if you place a lid on the saucepan). This may be a good opportunity for
an older child to help stir, under careful supervision.
3. Pour it all into a blender or food processor and
whizz up until smooth.
4.Return the blitzed mixture to the saucepan and
add the oats and milk. Cook over a low heat for about 5 minutes, until the porridge
oats have softened, stirring all the time.
5. Serve immediately, perhaps topping with more berries,
flaked almonds, a seed mix or yogurt.
